Kerala tastiest puli inj/இஞ்சி புளி ஊறுகாய்/Puli inji in tamil/Sweet and sour ginger pickle

Description :

Ingredients:

Ginger : 100 grms (finely chopped)
Tamarind Pulp : 1 cup small lemon sized
Green Chilly : 3 nos (finely chopped)
Jaggery : 1/4 cup or according to taste
Red Chili Powder : 2 tsp
Turmeric Powder :1/2 tsp
Asafetida : ¼ tsp
Fenugreek Powder : 1 tsp
Coconut Oil : 4 tbsp
Dry Red Chilly : 3 nos (broken)
Mustard Seeds : 1 tsp
Curry Leaves : 2 sprig
Salt to taste

Method

1. Soak the tamarind in 1 cup of hot water for a 10-15 minutes then squeeze the tamarind to extract the juice and filter the tamarind juice to get the extract. Set aside.

2. Chop the ginger very finely. Take a bowl add finely chopped ginger, green chilies, turmeric powder, red chili powder and salt. Mix well everything and set aside for half hour.

3. After half hour take a kadai heat 4 tbsp of cocount oil, add mustard seeds, red chilies, curry leaves saute for few minutes then add ginger mix fry it for 2 minutes on medium-low heat until the ginger is brown.

4. Pour in the tamarind water and jaggery.mix it well. Cover and Cook it for 5 minutes on low flame, stirring occasionally, until the mixture is thick, pulpy and reduced by half. Add fenugreek powder mix it and sauté for 1 minute.

5. Switch of the flame Cool and transfer into a sterilized jar or bottle and leave to settle for an hour and Enjoy!

Notes :

• We can use this for a week or two by keeping it in a refrigerator.

• Add more green chilies, if you wish to avoid chilly powder.
