Method

1) Heat a pan and Add the vegetables one by one, First add drumstick, because drumstick take a little longer time to cook, Followed by drumstick add, Carrot, beans, potato, Cluster beans and plantain.Add required salt, turmeric powder and water cook for 5-6 minutes.You can use any vegetables you like.

2) Now in a blender add grated coconut, Green Chilies, some curry leaves, and give it a few pulses we don’t need to grind them into a paste this consistency is enough

3) Now add this mixture to the cooked vegetables and mix well. Using a nonstick pan is preferred for this recipe because vegetables will release a lot of moisture while cooking and vegetables will taste their best when they are allowed to cook in their own juices. add curd and mix it well.

4) The final step add coconut oil, Use coconut oil because traditionally avial is made in coconut oil, coconut imparts nice smell and taste to our avial, and add some curry leaves and mix it with the avial

avail is ready to be enjoyed with Adai or with rice. and Chapathi too.
