Ingredients
Idli batter – 2 cup
For the seasoning
Oil – 2 tbsp
Mustard seeds 1 tsp
Urad dal – 1 tsp
channa dal -1 tsp
Whole black Pepper- 1 tsp slightly crushed
Cumin seeds – 1 tsp
Ginger – 1 inch piece grated
Green chillies – 1 finely chopped
Cashew nuts – 6 break it into 2-3 pieces
Curry leaves -few tender ones
Coriander leaves – 2-3 tbsp finely chopped
Carrot – 1 no (grated) optional
Salt to taste

Method
1. Take idli batter in bowl. Then heat oil, add mustard seeds, when it splutters, add all the ingredients (mentioned under seasoning) one after the other. When dal turns golden brown add ginger, green chili, curry leaves, coriander leaves, grated carrot sauté well. then add the seasoning to the batter and mix well.
2. You should grease the vessel as well. Pour batter to it ¾ th level of your vessel or tumbler.
3. Pour the batter in greased stainless steel tumbler and steam for 10-15 minutes or until the tooth pick (or a knife) inserted comes out clean well cooked. You can steam the idlis in steel cups or any shallow vessel.
4. Our kanjipuram idli is ready to eat.
5. Serve hot with coconut chutney, sambar and idli podi.
