Kambu curd rice/Pearl millet curd rice/Kambu thayir sadam/கம்பு தயிர் சாதம்/Bajra curd rice

Ingredients

Kambu / Pearl Millet – 1 cup
Water – 2.5 cup
Curd – 1.5 Cup
Salt to taste
shallot – 6 nos (roughly chopped)
Raw Mango – 1 tbsp grated
Carrot – 2 tbsp grated
Coriander leaves – 2 tbsp (finely chopped)

For Seasoning:
Sesame Oil – 2 tbsp
Mustard Seeds – 1 tsp
Cumin seeds – 1 tsp
Chana dal – 1 tsp
Green Chillies – 3 chopped finely
Red Chilies – 3 nos
Ginger – 1 tsp grated
Curry leaves – a sprig

Method:

1. Take pearl millet in a bowl soak minimum 3 hour and wash well. Add it to pressure cooker and cover with water. Pressure cook for 5 whistle. Turn off the heat and let the steam go all by itself. Open the cooker and fluff it up. Allow this to cool.

2. Make seasoning by heating oil and adding all the seasoning ingredients and saute for a min.

3. Now add that cooked kambu ,curd and salt mix well.

4. Add shallot, grated raw mango,grated carrot and coriander leaves mix well

5. Our healthy kambu curd rice is ready serve with your favorite pickle and vadagam.
