INGREDIENTS
FOR KALA JAMUN:
• ½ cup paneer grated
• 1 cup khoya crumbled
• 3 tbsp maida
• 1/ tsp baking soda
• 2 tbsp milk
• oil for deep frying
FOR STUFFING:
• 2 tbsp almonds, cashews and pista grated
• pinch any food colour, optional
FOR SUGAR SYRUP:
• 2 cup sugar
• 1 cup water
• 1/4 tsp rose essence
• 1 tbsp lemon juice
METHOD
1. In a large mixing bowl take crumbled khoya, grated paneer, maida and baking soda.
2. mash till the paneer forms a smooth dough without any paneer particles.
3. add milk if required to get moisture.
4. mix gently to form a smooth dough.
5. also prepare stuffing by mixing dry fruits and colour with prepared dough. make balls.
6. take a small ball sized dough and make ball.
7. and place the prepared dry fruit ball in centre.
8. cover and seal the ball.
9. heat the oil on low flame and when the oil is moderately hot, fry the jamuns.
10. fry till the balls turns black.
11. immediately, drop the hot kala jamuns into hot sugar syrup.
12. cover the lid and rest for 3 hours.
13. serve kala jamuns when doubled in size.
