Ghee rice in tamil / Ghee rice recipe / Nei Sadam / நெய் சோறு செய்முறை

INGREDIENTS

• 4 tbsp ghee
• 1 cup basmati rice
• 1 tbsp pepper corns
• 2 bay leaf
• 3 cardamom
• 4 cloves
• 1 Maratti mokku
• 2 star anise
• 1 inch cinammon stick
• 10 cashews
• 2 tbsp raisins
• 2 onion, thinly sliced
• 1 tbsp ginger garlic (crushed)
• 5 green chilies
• Milk – ¼ cup
• Curd – ¼ cup
• Water – 1 cup
• Mint leaves
• Coriander leaves
• salt to taste

Method

1. Wash 1 cups rice until the water runs clear. Soak it for at least 20 minutes.

2. Heat a pan with 3 tbsp of ghee. Fry cashews till lightly golden. Add rainsins and stir up, when they turn plumpest them aside in a plate.

3. In same pan also add spices like bay leaf, cardamom, cloves, star anise,maratti mokku, cinammon stick and black pepper. saute till they turn aromatic.

4. Add crushed ginger and garlic, Green chilies. Fry till the raw smell of ginger and garlic disappears.

5. Add sliced onions fry till turn brown.

6. Add milk, curd and mix it well.

7. Add mint leaves, coriander leaves and mix well.

8. Now add drained basmati rice fry on a medium flame for about 2 minutes.

9. Pour 1 cup of water and salt as needed. You may need to add more water depending on the rice. Taste the water and check the salt. If needed add more.

10. Cover and Cook the rice for 15 minutes or till fully done, if making pressure cooker allow the cook to whistle once on medium flame.

11. Once done open the lid and add 1 tbsp ghee and add fried cashews and raisins.

12. mix well without breaking rice grains.

13. serve ghee rice with raita or kurma.
