Drumstick flower gravy / முருங்கை பூ குழம்பு / Murungai poo kuzambu / Murungai poo recipe

INGRIDIENT
Sesame oil – 4 tbps
Drumstick flowers – 1 cup
Mustard seeds – 1 tsp
Fenugreek seeds – 1 tsp
Shallot – ¼ cup (finely chopped)
Garlic – 10 clove (finely chopped)
Green chilies – 2 nos
Curry leaves – 2 spring
Tomato – 1 no (finely chopped)
Tamarind water – 1 cup (extract from one lemon size tamarind)
Turmeric powder – ¼ tsp
Salt to taste
Coriander powder – 1 tsp
Sambar powder – 1 tsp
Coriander leaves
Hing – a pinch
Water as required

For masala
Shallots – 10 nos
Garlic – 5 cloves
Coconut – 3 tbsp (grated)
Dry roast ingredients
Toor dal – 1 tbsp
Chana dal – 1 tbsp
Peppercorns – 1 tbsp
Cumin seeds – 1 tbsp
Red chilies – 5 nos

Method
1. Clean and wash drumstick flowers. Keep aside
2. Soak a lemon size tamarind in a cup of water. Keep aside.
3. Heat a kadai adds the ingredients (dry roast). Roast until dal turns golden brown. Shift to the plate. Allow to cool completely.
4. in a same kadai heat 1 tbsp sesame oil and add shallots and garlic. Sauté until turn transparent.
5. Add grated coconut and sauté for a minute. Allow to cool completely.
6. In a mixer jar add roasted masala ingredients and water. Make a fine paste.
7. Our kulambu masala is ready.
8. In a kadai heat 1 tbsp of sesame oil. Add drumstick flowers sauté for 5 minutes. Keep aside.
9. In a same kadai add 3 tbsp of sesame oil. Add mustard seeds and fenugreek seeds. When they splutter add shallots, garlic, green chilies and curry leaves.
10. Sauté for 3 minutes.
11. Now add tomato. Sauté till tomato comes mushy.
12. Now add turmeric powder and salt. Sauté it well.
13. Now add coriander powder and sambar powder. Sauté well until raw smell goes out.
14. Now add ground masala paste and 1 cup water. Mix it well.
15. Cover and cook for 5 minutes.
16. Now add drumstick flowers and tamarind water. Mix it well.
17. Cover and cook for 10 minutes until oil separates from the gravy.
18. Switch off the flame.
19. Add coriander leaves and hing. mix it well.
20. Our healthiest drumstick flower gravy is ready to eat. Serve with hot rice.
