INGREDIENTS
• 1 bitter gourd / pavakkai, sliced
• 2 tbsp rice flour
• 2 tbsp besan flour
• 1.5 tbsp corn flour
• ½ tsp turmeric powder
• 2 tsp red chilli powder
• 1 tsp coriander powder
• 1 tsp garam masala powder
• 1 tsp fennel seeds
• Pinch of hing
• salt to taste
• oil for deep frying
• 2 spring curry leaves
INSTRUCTIONS
1. Slice the bitter gourd into slightly thick slices.
2. In a mixing bowl add all ingredients except oil & curry leaves.
3. combine all the ingredients well. do not squeeze the bitter gourd as the chips turns mushy.
4. now deep fry in hot oil. do not over crowd the bitter gourd.
5. stir occasionally, keeping the flame on medium.
6. fry till the bitter gourd (pavakkai) chips turn golden and crisp.
7. Switch off the flame. In the same oil fry the curry leaves.
8. Our Bitter gourd chips is ready to serve as a tea time snack or as a side dish with curd rice.
