Ingredients
Beet greens – 2 bunch (from 2 beet root)
Shallots – 10 nos (finely chopped)
Garlic – 5 clove (finely chopped)
Curry leaves – 1 spring
Green chili – 1 no
Mustard seeds – 1 tsp
Chana dal – 1 tsp
Urad dal – 1 tsp
Turmeric powder – ¼ tsp
Red chili powder – 1 tsp
Salt to taste
Grated coconut – ¼ cup

Method

Clean and chop the beet greens.

Heat oil in a kadai, add mustard seeds, when it splutters, add chana dal and urad dal saute until dal turns golden brown.

Add finely chopped shallots, garlic and curry leaves. saute until onions turn transparent.

Now add beet greens, turmeric powder, red chili powder, green chili and salt.
Mix well and sauté for 2 minutes..

Now cover and cook it for 5 minutes or until soft.

Switch off the flame. Add grated coconut mix well.

Delicious beet greens poriyal is ready to be served with rice.
