Aval payasam /அவல் பாயசம்/Flattened rice kheer/Atukula payasam/Payasam recipes
Description :
INGREDIENTS
• 2 tbsp ghee
• 20 cashew
• 20 raisins
• ¼ cup aval / flattened rice, thick
• 1 cup milk
• ½ cup jaggery syrup/ jaggery
• ¼ cardamom powder
Method
1. In a large kadai heat ghee and roast cashew, raisins.
2. roast until they turn golden brown and keep aside.
3. in the same ghee add aval(flattened rice) and roast on low flame.
4. keep roasting till the aval (flattened rice) turns golden brown.
5. now add milk and mix well.
6. boil on medium flame for 10 minutes or till aval softens.
7. add jaggery syrup and stir well to remove any impurities present.
8. now keeping the flame on low stir well.
9. get the aval paysam to a boil on low flame. do not over boil as there are chances for milk to curdle once jaggery is added.
10. turn off the flame and add 1 cardamom powder and roasted dry fruit.
11. serve aval paysam hot or chilled.
