Aloo matar sabji/Potato peas stir fry/உருளைக்கிழங்கு பட்டாணி சப்ஜி/Urulai kizangu pattani Sabji

INGREDIENTS
• Potatoes Peeled And Cubed – 250 gram
• Green Peas – ¼ Cup
• Onion Chopped – 1 no
• Ginger & garlic crushed – 1 Tsp
• Red Chili Powder – 2 Tsp
• Coriander Powder – 1 Tsp
• Garam masala powder – 1 Tsp
• Turmeric Powder – 1/4 Tsp
• Dried Mango Powder (Amchoor Powder) – 1 Tsp (or) ½ lemon extract
• Green Chilies, Chopped – 3 nos
• Cumin Seeds – 1 Tsp
• Curry leaves – 2 springs
• Coriander leaves – fist full
• Fennel seeds – 1 Tsp
• Mustard Seeds – 1 Tsp
• Water – 2 Tbsp
• Salt As Per Taste
• Oil – 3 Tbsp
Method
1. Heat oil in a pan. Add cumin seeds, Fennel seeds and mustard seeds.
2. When the seeds to splutter, add chopped green chilies, crushed ginger garlic and curry leaves sauté for 1 minutes.
3. Add chopped onion and sauté for 2 minutes.
4. Add cubed potatoes and green peas along with coriander powder, turmeric powder, red chili powder, dried mango powder, salt and mix well and saute for 3 minutes.
5. Add 2 tbsp water, and mix well. Close the lid and Cook on medium heat for 10 minutes.(Keep stirring occasionally)
6. Garnish with coriander leaves.
7. Your Potato Peas Stir Fry is ready. Serve hot with chappati.
