Method

1. Prepare the dough by taking 2 cup maida, 1 tbsp rava. crumble and 2 tbsp of ghee mix well making sure the dough holds shape. add water little by little and knead. knead well till you form a smooth and soft dough. Cover with moist cloth and keep aside for 30 minutes.

2. In a mixture jar add 1 tsp coriander seed, 1 tsp cumin seeds, 1 tsp fennel seeds grind coarsely and keep aside.

3. Heat 2 tsp oil in a pan, add ground masala powder saute till it turns aromatic.

4. now add 1 green chilli, small piece ginger, 2 pods garlic and saute for 30 seconds.

5. now add coriander power, cumin powder, dry mango powder, kashmiri chili powder, garam masala powder and salt mix well.

6. Then add 200 gram boiled and mashed potato mix well.

7. aloo stuffing is ready.

8. now pinch a small lemon sized ball and flatten it.

9. now scoop 1 tsp of prepared aloo stuffing and place in the centre.

10. get the edges together and form a bundle.

11. close the top by pressing and flattening.

12. gently press the edges and flatten to form a poori size.

13. when the oil is medium hot, add prepared kachori and fry.

14. Our aloo kachori is ready to serve
