Ingredients
Ragi / Finger millet – 3 tbsp
Curd – 3 tbsp
Salt to taste
Water as needed
Shallots
Cucumber
For Ragi Milk
1. soak ragi with water atleast five hours
2. after 5 hours wash the ragi and add 1/4 cup of water grind it for 5 minutes
3. filter it now we got a thick ragi milk
4. again we grind the ragi with 1/4 cup of water and filter it.
5. Now ragi milk is ready
For Ragi Porridge
1. Heat a vessel in stove pour the ragi milk stirring continuously with a ladle. This is done to prevent formation of lumps.
2. Keep it on medium heat and cook stirring continuously for 10 minutes or until the ragi thickens. Wet your fingers and touch the ragi, if it sticks, you have to cook for some more time.
3. Allow it to cool. Transfer to the bowl.
4. Now add the curd, 1 cup water (according to the consistency required) salt, mix well. Add finely chopped shallots and cucumber mix well and enjoy it.
5. You can have pearl onions or pickles or finely chopped raw mangoes or more milagai or vathal or cucumber as a side dish for this.
Note:
If you want to drink instant ragi koozh Mix 3 tbsp of ragi flour with ½ cup of water to form a thin batter. Then make above said method.
