மரவள்ளி கிழங்கு வடை / Maravalli kizangu vadai / Crispy Maravalli kilangu vadai / tapioca vadai

Ingredients
• ½ kg tapioca
• 3 tbsp rice flour
• 1 onion finely chopped
• 1 green chilli finely chopped
• Small piece ginger finely chopped
• 1 tsp pepper
• 1 tsp cumin seeds
• 2 sprig curry leaves
• coriander leaves finely chopped
• Salt as needed
• oil to deep fry
Method
1. immerse the tapioca to very hot water; leave it 5 minutes or until tapioca turn soft.
2. once cooled grind to smooth paste without adding water.
3. Take maravalli (tapioca) mixture, pepper, chopped onion, green chilli, ginger, cumin seeds, curry leaves, coriander leaves, rice flour and salt.
4. Grease your hands with water. Make small balls out of it.
5. Flatten into vada. Shape few vadas and keep it ready for a batch.
6. Heat oil in a kadai until hot. Do not let it fume.
7. Slip in the vadais and deep fry both sides until golden.
8. Drain in paper towels. Repeat to finish.
