பலாப்பழ அல்வா / Jackfruit halwa / Chakka varatti / Kerala special chakka varattiyathu

Ingredients:
Jackfruit – 1 cup
Jaggery – 1 cup
Water – 3/4 cup
Ghee – 3 tbsp
Ghee roasted Cashew nuts – 1 tbsp
Cardamom powder – 1 tsp
Method:
1. Separate the jackfruit pods from the ripe fruit. Slit each pod and discard it’s seed.
2. I preserved the seeds and collected the clean jackfruit pods together. Measure and keep aside.
3. Pressure cook the jackfruit pods with water for 3 whistles. Let the pressure subside naturally.
4. I measured the jackfruit puree and accordingly I added one cup of jaggery. You can vary this based on the sweetness of jackfruit. Next heat a pan with jaggery and little water. Cook it in medium flame.
5. When the jaggery dissolves in water completely and the syrup starts bubbling, pour the minced jackfruit puree. Keep stirring and cook the mixture in medium flame.
6. After few minutes of cooking, the mixture thickens. Add ghee and continue stirring.
7. When the jackfruit mixture thickens further and leaves the pan switch off the flame.
8. sprinkle cardamom powder and ghee roasted cashews mix well.
9. Our delicious Jackfruit halwa is ready to serve.
Notes
1. The quantity of jaggery highly varies based on the sweetness of jackfruit. So adjust accordingly.
