கோவை ஸ்பெஷல் அரிசி பருப்பு சாதம் / Coimbatore style arisi paruppu sadham

Ingredients
Rice -1 cup
Tur dal- ¼ cup
Chana dal – 1 tbsp (optional)
Onion -2
Red chillies -3
Garlic -6 cloves finely chopped
Tomato -1
Turmeric powder – ½ tsp
Red chili powder – 2 tsp
Sambar powder -2 tsp
Salt needed
For seasoning
Oil -2 tsp
Mustard seeds -1 tsp
Cumin seeds – 1 tsp
Curry leaves – 1 spring
For Garnishing
Ghee – 1 tbsp
Coriander leaves

Preparation
Wash and soak rice and dal for 30 minutes. Drain the water and keep it aside. I used just regular rice.(not basmati rice)

Method

1. Heat oil, add mustard seeds, when it splutters, add cumin seeds, red chilies and curry leaves.

2. When cumin seeds sizzle, add onion and garlic.
Saute until onions turn transparent. Then add tomatoes, turmeric powder, red chili powder, sambar powder and salt .

3. sauté well then add rice and dal, 3 cup of water.

4. Taste the water to check if the salt added is perfect. If it is slightly salty, it will be perfect once the rice is cooked.

5. Pressure cook rice for 3 whistles, once the pressure subsides, open the cooker, mix the contents, add a tbsp of ghee and garnish with finely chopped coriander leaves (Rice should not be mushy).

6. Serve hot with appalam or potato brinjal curry or even mango pickle.
