உடைத்து ஊற்றிய முட்டை குழம்பு / Udacha muttai kulambu / Egg drop gravy

Ingredients
• Sesame Oil – 1 tbsp+ 4 tbsp
• Shallot- 1 cup
• Ginger – small piece
• Garlic – 7 nos
• Fennel Seeds – 1 tsp
• Tomato – 3 medium size
• Turmeric Powder – ½ tsp
• Chilli Powder – 2 tsp
• Coriander powder – 1 tbsp
• Cumin Powder – 1 tsp
• Garam Masala Powder – 1 tsp
• Coconut – 1 cup grated
• Bay leaf – 1 no
• Cinnamon – 1 stick
• Onion – 1 medium size
• Curry leaves – 2 sprig
• Green Chillies – 2 slit
• Salt to taste
• Eggs – 6 nos
Instructions
1. Heat 1tbsp sesame oil in a pan, add in ginger, garlic, fennel seeds and shallot and tomato and saute till golden. Add in spice powder (turmeric powder, coriander powder, red chili powder, cumin powder, garam masala powder) sauté till raw smell goes out. Add coconut and mix well. Take it in a blender and puree till smooth.(if required add little water)
2. Heat 4 tbsp sesame oil in a pan, add bay leaf, cinnamon stick, green chilies, onion and curry leaves, saute for a minute.
3. Add ground masala and water mix well cover and cook for 5 minutes or till raw smell goes out.
4. Add 1 cracked egg add and mix well. This gives more thickness to the gravy.
5. Add 5 eggs and cover and cook for 5 minutes.
6. After 5 mintes gently flip it another side. cover and cook for 2 mins.
7 .Garnish with coriander leaves
8. Serve hot with rice.
