Ingredients
• ½ kg agathi flowers finely chopped
• 2 tbsp sesame oil
• 1 tsp mustard seeds
• 1 tsp urad dal
• 1 tsp chana dal
• ¼ cup shallots finely chopped
• 2 green chilies
• 2 red chilies
• 1 spring curry leaves
• 1/2 tsp turmeric powder
• 3 tbsp Water
• Salt to taste
• 3 tbsp grated coconut
• Few coriander leaves
Instructions
1. Clean and finely chop the agathi flowers.
2. Heat a pan, add oil
3. crackle mustard seeds and add urad dal and chana dal
4. When it changes colour, add finely chopped shallots, green chilies, red chilies and curry leaves. Fry until pink.
5. Now, add chopped flowers, turmeric powder. Sauté for 5 minutes.
6. Now add little water. Cover and cook for 3 minutes on medium flame.
7. After 3 minutes agathi flowers cooked well and all water absorbed too. At this stage add salt and mix it well.
8. Switch off and add grated coconut and coriander leaves. Mix well.
9. Our tastiest and healthiest agathi flower poriyal is ready to eat!!!! Serve with hot rice and sambar!!!!!!!!!
