Suryakala chandrakala recipe is very famous in sweet stalls but we can make it at home too.This is a bit lengthy process but worth the effort as it tastes so delicious. Both suryakala, chandrakala sweets get their names from their shapes. Suryakala is suryan which is sun shaped and chandrakala is chandran means moon so its half moon shape.

INGREDIENTS

FOR OUTER COVERING:
 2 cup maida
 2 tbsp ghee
 Salt to taste
 oil to deep fry

FOR SYRUP:
 2 cup sugar
 1 cup water
 ½ tsp rose essence

FOR INNER STUFFING:
 1 cup khoya
 2 tbsp grated cashew nuts
 2 tbsp grated almonds
 15 raisin
 1 tbsp powdered sugar
 1 tbsp sooji / white rava
 1 tsp cardamom powder

METHOD

1. Crumble khoya,add chopped nuts and powdered sugar, sooji.

2. Add cardamom power and mix well.

3. Take maida in a mixing bowl.

4. Add ghee and salt, first mix this well to resemble bread crumbs.

5. Add water little by little to form a smooth non sticky dough.Set aside to rest.

6. Take sugar in a pan, add water to it.

7. Heat it up, boil until it reduces and forms half string consistency. Add rose essence. Set aside.

8. Now knead the dough well.Roll to a thin sheet, cut with a lid. To make suryakala : Take 2 circles.add 1 tsp stuffing in the center.

9. Cover with another circle, press at the edges to seal completely.Pinch fold continuously to get pattern.

10. Now to make chandrakala : Take a circle, add 1 tsp of khoya stuffing.

11. Fold from one side, press and seal the edges.Pinch fold continuously to get pattern.Repeat to finish the dough.

12. Heat oil in a kadai, add 6.7 at a time, fry until golden brown.Cook in low medium flame.Drain and then add it to warm sugar syrup.Turn over and let it soak for 1 mins, then remove it from syrup and arrange it in a plate.
