Ingredients: (to serve 2-4 people)
Vermicelli (semiya)- 1 cup
Sugar – 1.5 cups
Cashewnut pieces – 1 tablespoon
Raisins (kismis) -1 tablespoon
Cardamom powder – 1/2 teaspoon
Ghee – 3 tablespoons
Orange or yellow food colour – a pinch
Rose essence – 3-4 drops

Method:
1. Heat 2 tablespoons of ghee in a pan and when it is hot, add the cashewnut and raisins and fry for a minute.
2. When it turns golden brown, add the vermicelli and fry for 2-3 minutes, until golden colour.
3. Add a pinch of food colour and 2.5 cups of hot water and allow it to come to a boil (if using very thick vermicelli, you will need 3 cups of water) and cook in medium flame for 8-10 minutes in medium flame.
4. Once all the water is absorbed, add the cardamom powder, sugar and mix well.
5. When the sugar melts, it will loosen again. Cook until it thickens again for about 2-3 minutes.
6. Add 1 tablespoon of ghee and a few drops of rose essence and mix well and serve.
