Ingrdients:
Raw rice (pacharisi) – 2 cups
sugar – 1 cup
Grated coconut – 1 cup
Method :
1.Soak the rice in 5 cups of water for 2 hours and drain the water well.
2. Grind the drained rice in a mixer jar into a fine powder in batches and sieve it well. Grind the unsieved coarse rice powder with the next batch and continue till all the rice is done.
3. Reserve the unsieved coarse rice powder got from the last batch, approximately 2 tablespoons.
4. Prepare coconut milk with the 1 cup of grated coconut with very very little water, approximately 1 to 1.5 tablespoons, and prepare thick coconut milk.Use the coconut residue again with less than 1/4 cup of water and prepare the second coconut milk and keep both the milks ready.
5. Take the sugar in a large bowl and add the first (thick) coconut milk and beat it well with a spoon for about 5 minutes, until the sugar is dissolved well in the coconut milk. In case the water is not enough to dissolve the sugar, add a few teaspoons of the second coconut milk (do not add all of the second milk, it can dilute the batter, add only if required. check by adding spoon by spoon, making sure not to dilute the batter. here, i added only 1 tablespoon of the second milk)
6.To the sugar mixture, add the prepared fine rice powder and the reserved coarse powder and mix well to a batter consistency. If the batter is very thick, add a few tablespoons of the second coconut milk and mix well (again, do not add all of the second milk, add only if required. check by adding spoon by spoon, making sure not to dilute the batter.)
7.Heat oil in a pan, and add a spoonful of batter in it. It will set in the bottom and then rise up and float in the oil. Fry for a minute in medium flame until it is golden colour and remove. Fry one at a time as it can stick together.
