Ingredients :
Brinjal – 4 or 5 medium size
tomato – 2 large
tamarind – i small lime size
chopped shallot onions – 1/4 cup
chopped garlic – 2 tablespoon
jaggery – 1 small piece or 1 spoon grated jaggery
chilli powder – 3/4 teaspoon
coriander powder – 1.5 teaspoon
turmeric powder – 1/2 teaspoon
curry powder or kuzhambu milagai podi – 1 teaspoon
mustard seeds – 1/2 teaspoon
fenugreek seeds – 1/4 teaspoon
asafoetida – 1/4 teaspoon
curry leaves – a few
Method:
1. Slit open the bottom of the brinjals upto halfway and place them in a bowl of water. Soak the tamarind in half cup of water and prepare tamarind syrup and keep that ready.
2. Heat 3 tablespoons of oil in a pan and add the brinjals and fry for 2-3 minutes until half cooked.
3. Once they turn light brown, remove from the oil and keep aside.
4. In the same oil, add the mustard seeds and fenugreek seeds and when it starts cracking, add the asafoetida and curry leaves.
5. Immediately, add the chopped onions and garlic and fry until they turn brown colour.
6. Then add the chilli powder, coriander powder, turmeric powder, kuzhambu milagai podi (you can also add sambar powder, if you dont have this) and give a quick mix and immediately add the tamarind water, chopped tomatoes, half-cooked brinjals,1.5 cups of water, 1.5 teaspoons of salt and allow it to come to a boil.
7. Once it starts boiling, close it with a lid and let it simmer in medium flame for 8-10 minutes.
8. Kathirkkai Kaara Kuzhambu is ready to serve with rice.
