Prawn Curry – Spicy Indian Curry

Description :

Ingredients : (to serve 3-4 people)

Prawns – 500grams
Onion – 2 medium size
Tomato – 2 large size
ginger-garlic paste – 1.5 tablespoon
coconut milk – 1.5 cup
chilli powder – 1/2 teaspoon
coriander powder – 1 1/4 teaspoon
turmeric powder – 1/2 teaspoon
mustard seeds – 1/2 teaspoon
fennel seeds (sombu) – 1/2 teaspoon
curry leaves
salt – to taste.
for marinating the prawns:
chilli powder – 1/2 teaspoon
turmeric powder – 1/4 teaspoon
salt -1/2 teaspoon

Method:

1. Marinate the prawns with chilli powder, turmeric powder and salt and set aside for 15-30 minutes.
2. Add about 2-3 tablespoons of oil in a pan, and when it is hot, add the mustard seeds and fennel seeds and once it starts cracking, add the curry leaves.
3. Next add roughly chopped onions, and sauté for about two minutes and then add the ginger and garlic paste and fry until the raw smell is gone
4. Now add the chopped tomatoes and cook in low to medium flame for about 3-4minutes until the tomatoes have become soft.
5. While the tomatoes are getting cooked, add 1 tablespoon of oil in another pan and add the marinated prawns and sauté  it for about 2 to 3 minutes until the prawns become little soft and keep it aside ready.
6. When the tomatoes are soft and cooked, add the chilli powder, coriander powder, turmeric powder, salt and mix well.
7. Add 1.5 cups of water and allow it to come to a boil.
8. Once it starts boiling, close it with a lid and let it simmer for about five minutes.
9. Now add the  1.5 cups of coconut milk and allow it to come to a boil and allow it to simmer in medium flame for about five minutes without lid.
10. Finally add the cooked prawns and allow to simmer in medium flame for another two minutes and Prawns curry is ready to serve.
