Ingredients : (to serve 2-3 people)
Pakkoda – 100grams (try to select big piece)
Small Onion (shallot onions) -1 cup (finely sliced)
Thick(First)Coconut milk – 1 cup
Dilute(second)coconut milk – 2 cups
Green chillies – 3 to 4
Ginger – 1 inch
Tomato – 1(Large size)
Coriander leaves – few
Mustard seed – 1/2 teaspoon
Fennel seed – 1/2 teaspoon
Curry leaves
Cinnamon – 2(big pieces)
Red Chilli Powder – 1 teaspoon
Coriander powder – 1½ teaspoon
Turmeric powder- 1/4 teaspoon
Cumin powder – 1/2 teaspoon
Salt- 1½ tsp
Method:
1. Heat 4 tablespoons of gingelly oil in a pan and when it is hot, add the Mustard seeds and Fennel seeds and when it starts cracking, add the Cinnamon and curry leaves.
2. Next add the finely chopped ginger and green chillies split into two pieces and fry for a minute.
3. When the raw smell of the ginger is gone, add the chopped onion and cook for 2 minutes until it becomes golden brown.
4. Next add the chopped tomatoes and cook for another 2 minutes, until becomes soft.
5. When the onion and tomatoes have mixed well, add turmeric powder, red Chilli Powder, Coriander powder, Cumin powder and mix for 5 seconds and immediately add the 2 cups of dilute coconut milk.
6.Allow it to come to a boil and add 1.5 teaspoons of salt and let it simmer with a closed lid for 7-8 minutes in medium flame.
7. Increase to flame high add 1 cup of thick Coconut milk and allow to come to a boil.
8. After boiling for a minute, add the pakkoda pieces and close it with a lid and cook in medium flame for 2 minutes.
9. After 2 minutes, add the chopped coriander leaves and pakkoda curry is ready.
10. Switch off the flame and let it rest for 15-20 minutes before serving.
