Ingredients:
Gram flour (kadalai maavu / beasan) – 1/2 cup
sugar – 1 cup
Ghee – 1 cup

Method:
1. Add 1 cup of sugar in a pan and add 1/2 cup of water and allow it to come to a boil.
2. Allow it to boil well until it becomes frothy and forms single string consistency (touch a drop of the syrup with your index finger and tap it with your thumb and you will get a thread like structure).
3. Once it starts forming the single string consistency, reduce to low flame and add the gram flour and mix well continuously until it is dissolved well, taking care not to form any lumps.
4.When it is mixed well, increase to medium flame and add 1/4 of the ghee and mix well and continue to cook by stirring continuously.
5. When the added ghee is completely absorbed and the ghee darkens in colour(approximately 3-4 minutes), add another 1/4 portion of the ghee and continue stirring.
6. Repeat this until all the ghee is used and cook until the it looses the batter consistency and the mixture has thickened well and starts leaving the side of the pan.
7. Once it is thickened well, switch off the flame, pour it in a readily greased pan and allow it cool down for 1-2 hours.
8. Once it has set well, cut it into pieces and serve.
