Mutton Biryani – Easy Prssure Cooker method!!!

Ingredients: (to serve 3-4 people)
Mutton – 500 grams
Basmati rice – 2 cups
Onion – 2 medium size
Green chillies – 6
Tomato – 1 large size 
Ginger-garlic paste – 2 tablespoons.
Cardamom – 6
Cloves – 8
Cinnamon stick – 4 big pieces
Star Anise (annasippoo) – 2
Salt – 2 1/4 teaspoons
Coriander leaves – 1 small bunch 
Mint leaves – 1 handful
Ghee – 4 tablspoons

Method:
1. Wash the rice and allow the water to drain and keep it aside ready.
2. In a pressure cooker pan, add the ghee and when it is hot, add the cardamom, cloves and cinnamon stick and saute for 5 seconds.
3. Next add the sliced onions and green chillies slit into 2 pieces  and fry for 3-4 minutes. When the onions turn golden brown colour, add the ginger-garlic paste and fry for a minute.
4. When the raw smell of the ginger-garlic is gone, add the sliced tomatoes and cook for 2 minutes until it turns soft.
5. Once the moisture in the tomatoes are dried and ghee comes out, add the cleaned mutton pieces and fry for 5 minutes until the pink colour of the mutton changes brown.
6. Add hallf of the chopped coriander and mint leaves, 4 cups of water and 2 1/4   teaspoons of salt and allow it to come to a boil and close the cooker with the lid.
7. Pressure cook for 6-7 whistles, until the mutton is 90% cooked.
8. Once the pressure is released, open the cooker and switch on the flame again.
9. Add the remaining coriander and mint leaves, washed and drained rice and close the cooker with the lid again and pressure cook for 2 whistles in high flame and 1 whistle in low flame.
10. Once the pressure is released, open the cooker and mix gently.
11. Mutton biriyani is ready to serve. Serve hot with onion raitha.
