Ingredients:
Paneer – 200grams (cut into small cubes)
onion – 1/3 cup chopped
tomato – 1/4 cup chopped
ginger – 1/2 teaspoon (finely chopped)
garlic – 1 teaspoon (finely chopped)
green chillies – 1/4 teaspoon (finely chopped)
chilli powder – 1/3 teaspoon
garam masala powder – 1/3 teaspoon
kasuri methi powder – 1/4 teaspoon
salt – 1/2 teaspoon
Coriander leaves – 2 tablespoon (finely chopped)
Method:
1. Add 2 tablespoons of oil in a pan and when it is hot, add the finely chopped ginger, garlic, green chillies and fry for 1-2 minutes.
2. When the raw smell is gone, add the chopped onions and fry for a minute and then add the chopped tomatoes and mix well together.
3. Close the pan with a lid and cook in low flame for 2 minutes.
4. Open the lid after 2 minutes and increase to high flame and cook for another 1 minute until all the moisture is dried up and then add the chilli powder, garam masala powder, kasuri methi powder, salt and mix for 5 seconds.
5. Once combined well, add the paneer cubes, mix well and close it with a lid and cook for a minute in medium flame.
6. Open the lid and make sure the mixture is completely dry (or cook for another 1-2 minute in high flame without lid until it becomes dry) and then add the chopped coriander leaves and mix well.
7.Switch off the flame and allow this mixture to cool down.
8. For preparing the sandwich, butter one side of the bread and place the buttered side on a pan or grill, and spread 2 tablespoons of the prepared filling on the plain side of the bread.
9.Sprinkle some chopped onions (optional) and coriander leaves and close it with another bread, buttered on one side and the buttered side facing up.
10. Close the grill and cook for 3-5 minutes and if using a pan, cook each side for 1 minute, until golden brown.
11. Paneer sandwich is ready and you can serve it with sauce or any chutney of your choice.
