Ingredients:
Mutton – 250grams (cut into small pieces)
Potato – 2 large or 3 medium
egg – 1
ginger and garlic paste – 1 tablespoon
coriander powder – 1.5 teaspoon
chilli powder – 1 teaspoon
garam masala powder – 1 teaspoon
turmeric powder – 1/4 teaspoon
salt – 3/4 teaspoon
Coriander leaves – 2 tablespoon (finely chopped)

Method:
1. Add 2 tablespoons of oil in a cooker pan and when it is hot, add the ginger and garlic paste and fry for a minute, until the raw smell is gone and then add the cleaned mutton pieces.
2. Fry for 2-3 minutes, until the mutton colour changes brown and then add 1 to 1.5 cups of water and salt and cook for 20-30 minutes according to your pressure cooker.
3. Open the lid after the pressure has settled and switch on the flame again and cook for another 1 or 2 minutes until all the moisture is dried up and then add the chilli powder, coriander powder, garam masala powder, turmeric powder and mix for 5 seconds.
4. Once combined well, add the boiled,peeled and mashed potatoes, coriander leaves, switch off the flame, mix well and allow this mixture to cool down.
5. For preparing the cutlet, use a cutlet mould, fill it with the prepared mixture and press tightly and release it out.
6. Beat the egg well in a bowl and dip the prepared cutlet in the egg and then drop it in the breadcrumbs bowl and cover it well with the breadcrumbs.
7. Add the prepared cutlet in the hot oil, leaving atleast 30 seconds interval between each cutlet and fry till brown colour and remove.
8. Mutton Cutlet is ready and you can serve it with sauce or any chutney of your choice.
