Sweet Corn Capsicum Fried Rice
INGREDIENTS
Long grained rice (Basmati Rice) — 1 Cup
Finely Cut All Coloured Capsicum – ½ Cup (Each)
Cooked Sweet Corn Kernels — 1 Cup
Cut Carrot — 1 Cup
Red Chilli Flakes — 1 Tsp
Salt — To Taste
Aji-no-moto — 2 Pinches
Mixed Herbs (Dried) — ½ Tsp
Oil — For Frying
METHOD
1. Wash the rice. Pour 2 Cups of Water and pressure cook for 4 whistles.
2. Cool, separate the grains.
3. Heat oil in deep curved pan, add carrot. Then add colour capsicums, one after the other and fry on a high flame.
4. Saute well. Add Aji-no-moto and sauté well again.
5. Add cooked corn. Fry well with other vegetables. Add salt to taste and little sugar.
6. Add cooked rice, salt, chilli flakes and fry till it turns hot.
7. Sprinkle mixed herbs just before removing from fire.
