എളുപ്പത്തിൽ സമോസ ഉണ്ടാകുവാൻ പഠിക്കാം സമോസ ഉണ്ടക്കിട്ട് ശരിയാവാത്തവർ ഇതുപോലെ ചെയ്തു നോക്കു||Samosa

Description :

Ingredients:
Rice flour / Idiyappam powder / Pathiri powder – 1 cup (Roasted / Unroasted)
Maida / All purpose flour – 1 cup
Boiling water – 1 cup
Salt
Oil – 2 tbsp

For the filling
Potato – 2 / 375g (Boiled and mashed)
Onion – 1 big (Finely chopped)
Ginger – 1 big piece (Crushed)
Green chilly – 1
Coriander leaves
Pepper powder
Garam masala – ½ tbsp
Cumin seeds – ¼ tsp
Mustard seeds – ½ tsp
Coriander seeds – 2 pinches

Steps:
Combine maida, rice flour, salt and oil in a bowl.
Add boiling water and make a smooth dough.
Cover and let it rest.

Heat oil in a pan and add mustard seeds.
Add cumin seeds and coriander seeds.
Add onion, ginger and green chilly.
Once the onion becomes soft, add pepper powder, coriander leaves, boiled and mashed potatoes, garam masala, coriander leaves and salt.
Mix well.
Switch off and let it cool.

Pinch small portions and flatten it out as a thin disc using a rolling pin.
Cut off the uneven edges.
Cut it into rectangle sheets.
Flatten again to make it thinner.
Heat a pan and slightly heat up both sides of each rectangular sheet to make it stiff.

Make a thick paste of maida adding some water.
Apply a layer of the maida paste on all four sides of the sheet.
Make a cone out of each rectangular sheet
Place a spoonful of the filling inside the cone and seal the edges.

Heat oil in a pan and deep fry the samosas.
Cook on low heat once the samosas start floating on top of the oil.
Flip and cook both sides.
Remove and enjoy the hot and crispy samosa.
