Thattai is a Crispy thin Indian Savory and one of the important dish made during festivals, especially during Diwali. It is also commonly known as crackers. Crackers are those snacks that everyone is fond of and loves eating. But, ever faced the problem of the crackers being too spicy for you? Or not spicy enough? Well, why not make your crackers yourselves at home to match your tastes? Here is a simple recipe for you to experiment with.

Ingredients:
Rice flour – 2 cups
Onion – 1 no. finely chopped
Green chilli – 2 no.’s finely chopped
Cumin seeds – 1 Tsp.
Chana Dal – 1 Tbsp. (soaked 1 hour)
Salt to taste
Pinch of Cooking soda
Butter – 1 Tsp.
Water
Oil for deep frying

Preparation:
Soak the chana dal in enough water for at least an hour.

Method:
1. Take a huge mixing bowl.
2. Add two cups of rice flour, finely chopped onions, finely chopped green chillies, cumin seeds, chana dal, salt and cooking soda to the mixing bowl. Mix well.
3. Add some butter and mix well.
4. Gradually add some water and mix thoroughly until it forms a coarse mixture.
5. Meanwhile, heat some oil in a pan for frying.
6. Take a little of this mixture in your hands and form small balls. Flatten them using your fingers until they are thin enough.
7. Now, gently drop these into the hot oil.
8. Deep fry them on a medium-low flame until they are a beautiful golden-brown in colour and crispy.
9. Remove them from the pan and drain the excess oil. Let them cool down.
10. Your rice crackers are ready to be served!

Tips:
You can increase or decrease the number of chillies and amount of salt added according to your taste.
You can either make the crackers really thin or thick, depending on your taste and preference.
