Mumbai Karachi halwa is a recipe made from few ingredients sugar, ghee, corn flour and water. It has got a chewy texture and this is the speciality of this recipe. A little tedious and time consuming recipe but end result is just amazing. So it’s worth a try. Do try this recipe at home for this gauri and leave a comment for me. Ingredients:
• 1 tbsp Melon seeds
• 2 cups Sugar
• 1 cup Water
• 1 cup Corn flour
• 1/2 tsp Lemon juice
• 1/2 cup Ghee
• Orange color
• Dry fruits

Method:
• Heat up a pan on medium heat and add melon seeds.
• Dry roast the seeds and take them out into a dish.
• You can add dry fruits instead of melon seeds. You don’t need to
roast dry fruits.
• Heat up pan on medium heat.
• Take sugar into a pan and add water.
• Let the sugar dissolve and cook for 5 minutes more.
• Do not overcook the syrup and no need to look for single thread
consistency.
• Take corn flour into a bowl and add water.
• Mix well and make paste. No lumps should be formed.
• After cooking the sugar syrup for about 5 minutes, add lemon
juice.
• Lemon juice prevents from crystallization of sugar.
• Mix the corn paste well and add it to sugar syrup.
• Mix well quickly and make sure no lumps of corn should be
formed.
• Increase the heat to high and cook stirring continuously.
• Stir the mixture continuously and make sure that corn does not
settle at the bottom of the pan.
• Do not stop stirring for a single second too.
• When the mixture comes together, add 1 tsp ghee and mix well.
• When 1 tsp ghee is well absorbed, add other tsp ghee and mix
well.
• The ghee should be absorbed well into the corn mixture.
• Do not add the whole ghee at a time.
• Add 1 tsp at a time and mix well.
• All the ghee should be absorbed well in the mixture.
• When it comes together nicely and it gets translucent or
transparent texture, add food colour, roasted melon seeds and
mix well.
• If you like the halwa soft, then turn off the gas after adding food
color and set it.
• Cook the halwa more if you want the it chewier.
• After cooking for 10 minutes more, turn off the gas.
• Take it out into a tray and spread it evenly.
• Add melon seeds and dry fruits.
• Let it cool down to room temperature for about 30 minutes.
• Do not keep it in freeze. It will lose its glaze if you keep it in
freeze.
• Cut the halwa into pieces and halwa is already.
