INGREDIENTS
1. Noodles – For 3-4 People
2. Eggs – 3-4
3. Spring Onions – 1/2 Cup
4. Carrots – 1/2 Cup
5. Capsicum – 1/2 Cup
6. Onions – 1/2 Cup
7. Salt – 1 Teaspoon
8. Pepper Powder – 1 Teaspoon
9. Chopped Green Chillies – 1 Teaspoon
10. Soya Sauce – 1 Teaspoon
11. Tomato Ketchup – 1 Teaspoon
12. Vinegar – 1 Teaspoon
13. Chopped Garlic Cloves – 2 Teaspoons

We need to boil noodles first.
Boil water filled up to more than half in a bowl.
Add 1 teaspoon oil, 1/2 teaspoon salt.
Add noodles to the boiling water.
Boil for 5 minutes.
After noodles cook put the noodles in a strainer.
After straining off the water, pour cold water immediately over the noodles. This will prevent noodles from sticking to each other.
Let the noodles dry.
Prepare eggs and vegetables in mean time.
Beat 4 eggs in a bowl.
Heat 1 teaspoon oil in pan.
Add beat eggs. After bottom layer cooks, flip and mix. Add a pinch of pepper powder and salt.
Mix and move it into a different plate.
Heat 2 tablespoons oil in same pan.
Add 2 Teaspoons chopped garlic cloves and fry.
After a minute, add diced onions. Add green chillies.
Add chopped carrots, chopped beans, cabbage, capsicum and Mix.
Cook on high flame.
Other vegetables like beans, cabbage could be added.
Close lid and fry.
Add 1 teaspoon salt or salt to taste,
1 teaspoon pepper powder and Mix.
Add 1 teaspoon tomato ketchup (optional), 1 teaspoon soya sauce, 1 teaspoon vinegar and mix.
Add fried eggs and mix.
Add boiled noodles and toss it.
Garnish with spring onions and serve hot.
