Ingredients:
urid dal (ulunthu paruppu) – 1/2 cup
Curd / yoghurt – 1 cup
ginger – 1/2 tablesppon (finely chopped)
curry leaves – 1.5 tablesppons (finely chopped)
cumin seeds (jeera) – 1/4 teaspoon
asafoetida (perungayam) – 1/4 teaspoon
salt – 1/2 teaspoon
Method:
1. Soak the urid dal in 2 cups of water for 2 hours and grind it with very little water into a thick and smooth batter.
2. To the batter add the chopped ginger, curry leaves, salt, asafoetida, cumin seeds and mix well.
3. Scoop a handful of batter and make a hole in the middle and drop it in hot oil and fry in medium flame until it becomes golden colour and remove from oil (need not fry until brown colour as for usual vadai)
4.Add the removed vadai directly into a bowl of warm drinking water and allow to sit for minutes.
5. Once it has soaked well, take them out and squeeze out the extra water and place it in a bowl to be served.
6. Beat the curd/yoghurt well until it is nice and creamy and add required salt for the curd and mix well.
7. Now pour this curd over the vadai in the bowl, enough to immerse the vadai.
8. Sprinkle with cumin powder and chilli powder(optional) and garnish with coriander leaves and kara boondhi just before serving.
