മുട്ട കുറുമ (MUTTA KURUMA)
Description :
Ingredients:
Egg – 6 (Hardboiled and deshelled)
Mustard seeds – ½ tsp
To roast and grind:
Coriander seeds – 3 tbsp
Cloves – 5
Cinnamon – A small piece
Cardamom – 8
Fennel seeds – 1 tbsp
Kashmiri dry red chilly – 10
Bay leaves
Cashew nut – 1 tbsp
Onion – 2 big (Finely chopped)
Ginger – 1 big piece (Crushed)
Garlic – 7 fat cloves (Crushed)
Green chilly – 2 (Slit open)
Curry leaves
Turmeric powder – ½ tsp
Tomato – 1 (Chopped)
Salt
Oil
Steps:
Heat oil in a pan.
Add Kashmiri red chilly, coriander seeds, cloves, cinnamon, cardamom, fennel seeds and bay leaves.
Add cashewnuts.
Once the colour of the spices changes, add onion and mix well.
Add ginger, garlic, green chilly and curry leaves.
When the onion starts to turn brown, lower the flame and add turmeric powder. Sauté till the raw smell goes away.
If required, add red chilly powder at this stage and sauté till the raw smell goes away.
Add tomato and salt.
Cover and cook on medium flame till the tomatoes are done.
Switch off and let it cool.
Once cool, grind it to a smooth paste adding some water.
Heat oil in a pan.
Add mustard seeds and let it splutter.
Add the ground masala.
Add some water for the gravy.
Add salt.
Bring it to a boil.
Make gashes on the egg and add it to the gravy.
Mix well.
Once the gravy thickens, switch off.
Garnish with coriander leaves.
Serve the egg kurma with chapathi.
