Ingredients:
Unsalted butter / Margarine / Dalda – 200grams
sugar – 200grams
egg – 4
Maida (all purpose flour) – 200grams
Baking powder – 2 teaspoons
Pineapple essence – 2 teaspoons
Yellow food colour – a pinch
Tinned pineapple – 1 tin or few slices of fresh pineapple

Method:
1. Beat the butter well until it is soft and doubled in size.
2. Next add the sugar and beat well until it gets dissolved well.
3. once the sugar is dissolved and combined well with the butter, add the eggs and pineapple essence and mix well until the mixture becomes creamy.
4. Mix the baking powder and yellow food colour  well with maida and add it to the butter mixture and mix well.
5. The cake batter is ready. Brush oil in a cake tin and arrange the pineapple pieces or slices from the tin on it. (If using fresh pineapple, cut it into thin slices or pieces and soak them in sugar syrup (100gms sugar dissolved in 1 cup of water) for an hour and then use.)
6. Pour the prepared cake batter on top of the arranged pineapple pieces, leaving a gap in the center, to allow space for the cake to raise.
7. Preheat the oven to 170 º C and bake the cake for about 30-40 minutes until the knife inserted in the center of the cake comes out clean.
8. Once the cake is ready, place a plate or cooling rack on top of the cake tin and flip it upside down and tap the cake tin gently to get the cake out.
9. Pineapple upside down cake is ready.
