Vange batata fulkavani is a very easy and simple recipe. You can call it amti or rassa bhaji. It tastes just awesome and can be made from very few ingredients. This can be a good alternative for your regular dal or amti. You can try this recipe at home and drop a comment for me. Do not forget to like, share and subscribe.

Ingredients:
• 2 tsp Oil
• 1/2 tsp Mustard seeds
• 1/2 tsp Cumin seeds
• 1/4 tsp Hing
• 1 tsp finely chopped Garlic
• Curry leaves
• Finely chopped Tomato
• 1 tsp Goda masala
• Red chili powder
• 3~4 tsp roasted Peanut powder
• Chopped Potato
• Water
• 2 chopped Vangi
• Salt to taste
• A small piece of Gudh / Jaggery (Optional)
• Finely chopped Coriander leaves

Method:
• Heat up oil in a pan.
• Add mustard seeds and let it pop up.
• Add cumin seeds and let it splutter.
• Add hing, garlic, curry leaves and fry it for about a minute.
• Add tomato and fry for about 2 minutes.
• Add goda masala, red chili powder and mix well.
• Add roasted peanut powder and mix well.
• You can use shredded fresh coconut or dry coconut in place of
peanut powder.
• Add potato and mix well.
• Add water and mix well.
• Bring it to boil.
• Cover and cook on medium heat until potato is almost cooked for
about 8-10 minutes.
• Open the lid and check if the potato is cooked.
• Add vangi and mix well.
• Cover and cook for another 5-6 minutes.
• Add salt, jaggery and mix well.
• You can skip gudh if you don’t like.
• Add coriander leaves and fulkavani is all ready.
• It goes well with Jawar or Bajra bhakari.
• It goes well with rice too.
