Spicy pickles have always been a weakness to Indians. To Biriyani eaters, it is the perfect sider. They are made from mangoes, lemons, veggies and almost every other thing. Unlike the usual pickle, this is made with a twist, which enhances flavour but reduces shelf life.

This is a time-taking yet delicious recipe that can be prepared even by beginners.

ഇങ്ങനെയും ഈ സ്‌പൈസി വിഭവം ഉണ്ടാക്കാം || Spicy Treat || Ep#591 || Salu Kitchen

1. 3 raw mangoes; slice the green mangoes as shown
2. add salt as required
3. kashmiri red chilli powder as required
4. turmeric as required
5. 1 tbsp vinegar
6. mix well
7. keep aside and marinate
8. 6 medium sized onions; peel and finely chop as shown
9. dissolve lime-sized tamarind in 3 cups of hot water and extract
10. heat 3 tbsp gingelly oil in a hot thick bottomed pan
11. splutter 1 tsp mustard seeds
12. after spluttering, add 4 dried red chillies as slices
13. add curry leaves as required
14. crush ginger and garlic in shown quantity and chop 4-5 green
chillies
15. add these to the pan and saute saute on high flame
16. when it is saute well, add the finely chopped onions; saute on high flame until golden brown
17. stir continuously so thatit does not get burnt
18. when onions are well saute, now add the spices
19. 1 tsp turmeric
20. 4 tbsp kashmiri red chilli powder
21. 1 tbsp coriander powder
22. ~½ tbsp asafoetida
23. salt as required for this masala
24. mix well
25. when the raw aroma changes, add 1 tsp sugar
26. add 2 tbsp vinegar
27. mix well and then add the dissolved tamarind extract after filtering
28. continue mixing on high flame
29. stir continuously until the gravy becomes thick
30. check for salt and adjust accordingly
31. it has almost become 45 minutes since the slicing of mangoes; this recipe will take almost1 hour for preparation
32. quick tip: when the gravy is being moved, the bottom of the pan must become visible, that is the required structure of gravy
33. turn off the flame and allow it to cool to room temperature
34. gravy has cooled now, now add the marinated mangoes and mix well
35. this pickle can be bottled in an air-tight container and stored in refrigerator for about a week
36. this pickle will not last for long duration, because of onion
