Kudukechi/Pidduke Bhaji (Green Leafy Amaranth Vegetable) is seasonal vegetable available in Goa only during Monsoon. Recipe i’m sharing is not that complicated. It only has addition of onions, Split Red lentils (Masoor dal), Grated Coconut, Dried Red Chillies, Salt & Sugar. This dish can be included in the authentic Goan thali as well.

■ Ingredients & Qunatity

Kudukechi/Pidduke (Green leafy Amaranth Vegetables) – 2 bunch
Onions (Sliced) – 2
Split Red lentil (Masoor dal) – 1/2 cup
Freshly grated coconut – 1/2 cup
Dried Red Chillies (Broken) – 2
Salt – 1/2 tsp
Sugar – 1/2 tsp
Water – 100 ml
