Coconut Chicken curry | Ventuno Home Cooking

Coconut Chicken Curry
Ingredients

Chicken – 1 kg
Onion – 5 nos (thinly sliced)
Tomato – 2 nos (chopped)
Salt
Oil – 1 Tbsp
Few curry leaves

For Masala:
Coriander seeds – 2 tsp
Pepper corns – 1 tsp
Fennel seeds – 1 tsp
Cumin seeds – 1 tsp
Red chilis – 5 to 6 nos
Dry grated coconut – 1/4 cup
Few garlic cloves
A piece of ginger

Method:
1. First, dry roast coriander seens, pepper corns, fennel seeds, cumin seeds and red chilis,
2. Dry roast the grated coconut.
3. Grind the roasted ingredients with garlic and ginger to a fine paste
4. Heat oil. Saute onions till light brown.
5. Add the ground masala. Add little water and mix well
6. Add the chicken pieces. Mix and let it cook for 5 to 10 minutes
7. Add tomatoes, salt, water to cover the chicken & few curry leaves
8. Close & cook for 25 to 30 minutes. Then open & cook till you get the desired thickness.
