Poori masala in tamil/Poori kilangu masala/உருளைக்கிழங்கு மசாலா/பூரி கிழங்கு மசாலா

Ingredients
Potatoes – 250 gram
Onion -2 nos ( finely chopped)
Tomatoes – 2 nos ( finely chopped)
Oil – 3 tbsp
Mustard seeds – 1 tsp
Fennel seeds – 1 tsp
Green chilies – 3 nos
Ginger – 1 tbsp (finely chopped)
Turmeric powder – ½ tsp
Curry leaves
Coriander leaves
Salt as per taste.
Water – ¼ cup
Method
1. Take washed potatoes in a pressure cooker. add enough water so potatoes are submerged in the water. Close the lid of pressure cooker and put the weight on.
2. Let it cook for 2-3 whistles on medium heat. Let the pressure go down by itself then open the lid, remove boiled potatoes and let it cool to touch or warm.
3. Peel the potatoes. Crumble them roughly.
4. Heat the oil in a pan add mustard seeds. Let them pop.
5. Then add fennel seeds, ginger, curry leaves and green chilies. Saute for a minute.
6. Add turmeric powder. Immediately add sliced onions. Cook till get soft.
7. Add tomatoes and Cook till tomatoes get soft and cooked.
8. Now add water.
9. Then add crumbled potatoes and salt. Mix well.
10. Bring it to a boil cover and cook it simmer for 2 minutes.
11. Lastly add chopped coriander leaves and Mix well
