Sambar Powder Recipe
Ingredients: Coriander seeds – 4 tbsp
Red Chilli – 17 no.s
Chana Dal – 2 tbsp
Urad Dal – 1 1/2 tbsp
Cumin seeds – 1 1/2 tbsp
Peppercorns – 1 tbsp
Fenugreek seeds – 1 1/2 tsp
Mustard seeds – 1 1/2 tsp
A few Curry leaves
Turmeric powder – 1/2 tbsp
Asafoetida powder – 1/2 tbsp
Method.
There are three steps. Step 1: Roast the ingredients one after the other
(In making your own Sambar powder, you have to be very sensible to change in color and smell while roasting the ingredients Roasting is the most crucial step.
Caution: Do not let any of the ingredients burned. Roast till you get a nice aroma. shift it to a container and let it cool down).
Step 2: Let them cool down
Step 3: Grind in to powder
1. Roast 1/2 cup Coriander seeds till light brown in color.
2. Roast about 17 long dried Red Chilli.
3. Roast 2 tbsp Chana Dal.
4. Roast 1 1/2 tbsp of Urad Dal.
5. 1 1/2 tbsp of Cumin seeds.
(Cumin seeds roast very fast. so be cautious & don’t burn it)
6. 1 tbsp Peppercorns.
7. 1 1/2 tsp of Fenugreek seeds.
8. 1 1/2 tsp of Mustard seeds.
9. A few Curry leaves.
10. Now, turn off the stove & then add 1/2 tbsp of Turmeric powder,
11. Add 1/2 tbsp of Asafoetida powder.
12. Let the roasted ingredients cools down completely.
13. Grind them into a fine powder.
Your Sambar powder is ready.
Let it cool down & store in an airtight container. Use as & when you need.
