Balushahi or Badushah is almost same and Balushahi is available in and around India with a little variation but trust me it tastes amazing, with the sweetness of sugar syrup filling up the crunchy Balushahi. Well what more can anyone ask for. Its rough texture with the crunchiness makes it a very popular dessert. During the festivities in the states of Bihar you may find Balushahi getting served up around everywhere. Well there is nothing more great than making super tasty dessert at home. So the next time festivities are coming up make this super great Balushahi at home and enjoy it sweetness. The taste of desi ghee oozing out of it is a taste one should not miss. Prep time: 10mins
Cook time: 10-15mins
Serves: 11-12nos
Ingredients:
1. Sugar: 300gms(for syrup)
2. Maida: 300gms
3. Desi ghee: 75gms
4. Baking powder: 3/4th tbs
5. Green cardamom powder: ½ tbs
6. Saffron: a little(soaked in water)
7. Refined oil: for frying
Method:
Step 1: Making the dough
To make a great tasting Balushahi, the dough needs to be prepared well. So at first we need to prepare the dough. Pour the Maida in a bowl and put the desi ghee in it as well. Now put the baking powder too. Mix everything well so all the ingredients mixes well with each other.
Now we will make nice and soft dough by gradually pouring water. The dough needs to be made just so it binds, do not smoothen it and don’t need it like the dough of rotis.
Cover the dough and let it rest for at least 20mins.
Step 2: Making the syrup
Now turn the gas on and put a pan on it and pour the sugar in it. Now put 150ml water i.e. half of the sugar’s quantity and let it melt so the sugar syrup is made well.
Turn the gas off and check for the consistency. Now put the cardamom powder and the kesar soaked water as well and mix it well.
Step 3: Making the balls for Balushahi
Its been more than 20mins of the dough resting so let’s prepare the Balushahi out of it. Make long rolls out of the dough and then take out small portions from it. Now give the small portions the shape of Balushahi by making round balls and then flattening and then pressing it in the middle with the help of your thumb and finger to form a depth.
Make all the Balushahis like this.
Step 4: Frying up the Balushahis
Now turn the gas on and heat up the oil for frying. Check its heat by putting a little dough in it when it afloats the oil is ready to fry up the Balushahis.
Now put the Balushahis one by one and carefully and fry on medium flame. When they will start floating on top then turn the flame up and fry for 2-3mins. Now turn then after that and be careful while turning. Now deep fry more for 5-7mins and let then change their color. Now when they are done turn the gas off and take them out and put them straight to the sugar syrup and let it absorb the syrup. Now turn them down and let it absorb the syrup from another side.
Step 5: Serving up
After the Balushahi has been dipped in the sugar syrup the sweet is ready. So take it out on a plate and let the syrup dry so we can serve up.
Now put the Balushahi on a dish and garnish well with pista and enjoy its amazing taste!

Note:
1. The dough of Balushashi needs to be coarse not smooth so that the perfect texture is formed.
2. You can use refined oil in place of Desi ghee as well.
3. While making sugar syrup if it is not clear then drops little milk and clears the froth with impurities for clear sugar syrup.
4. Fry up the balushahi slowly on medium flame and then turn them over to fry from both the sides.
5. Be careful while turning they are soft and may break apart.
6. Dip the Balushahi straight into the syrup after frying as hot balushahi and syrup helps the Balushahi absorb the syrup well and nice.
7. Now let the Balushahi dry up the syrup and then serve it well with garnish of Pista.
