Egg kurma in tamil / Muttai kuruma / முட்டை குருமா /Egg recipes

Description :

Ingredients:

• Boiled eggs – 4
• Onion – 2
• Tomato – 2
• Red chili powder – 1 tsp
• Turmeric powder – 1/4 tsp
• Coriander leaves
• Salt – to taste
• Oil – 3 tbsp

To Temper:

• Mustard seeds – 1 tsp
• Fennel seeds – 1 tsp
• Curry leaves

To grind to a smooth paste:

• Fresh coconut – 1/2 cup
• Poppy seeds – 1 tsp
• Cashew nuts – 7 nos
• Cardamom – 2
• Cloves – 3
• Ginger – 1 inch piece
• Garlic – 5 pods
• Green chili – 1
• Red chili – 2 no
• Maratti mokku – 1 no
• Star anise – 1 no
• Cinnamon stick – 1 no
• Cumin seeds – 1/2 tsp
• Fennel seeds – 1/2 tsp

Method

For the masala paste:

1. Take all the ingredients for the paste in a mixie jar.

2. Add 1/4 cup water and grind to a smooth paste.

For Kurma

1. Heat a kadai with oil.

2. Add mustard seeds, fennel seeds, curry leaves. Let the mustard splutter.

3. Add onion and saute till the onions become soft.

4. Add tomato saute till the tomato softens a bit.

5. Add the red chili powder, turmeric powder and salt

6. Add freshly ground coconut paste sauté till the raw smell go out.

7. Add 1/2 cup water and mix well.

8. Add boiled eggs and mix well.

9. Close the kadai with its lid and cook for 10 minutes on medium low flame.

10. After 10 minutes open the lid and mix gently.

11. Garnish with coriander leaves.

12. Egg Kurma is ready to be served with Chapathis or Pulao.
