To Make Corn Fried Rice
Basmati Rice – 1 Cup
Corn Kernel – 1 Bowl
Oil – 3 Tbsp
Garlic – 1 Tbsp
Onion – 1 No.
Green Chilli – 2 Nos
Green Capsicum – 1/2 Cup
Red Capsicum – 1/2 Cup
Salt – 1 Tsp
Pepper – 1 Tsp
Soy Sauce – 2 Tsp
Vinegar – 2 Tsp
Spring Onion Whites
Spring Onion Greens
Method:
1.Soak the rice for 30 mins.
2. Boil water in a pot. Add salt and oil to it.
3. Mix it all and add the soaked rice. Boil the rice until it is fully done. Strain and keep it aside.
4. Heat oil in a wok.
5. Add chopped garlic, onion, green chillies and saute on a high flame.
6. Add in the green capsicum, red capsicum and saute for a while.
7. Next, add in the cooked corn kernels and saute for a few more seconds.
8. Add salt, pepper and mix well. Add soya sauce and vinegar.
9. Gently drop in the cooked rice to the wok and mix.
10. Lastly add chopped spring onions and spring onion greens.
11. Yummy corn fried rice is ready to be served hot and nice.
Corn fried rice is a wonderful Indo-chinese style rice recipe wherein the cooked rice is mixed with a variety of vegetables, mainly with corn. This is a simple and easy recipe which is great for lunchboxes too. We have used very minimal amount of spices in the recipe as it has to be balanced. But if you want it to be much more spicier and hot, you can add the quantity of green chillies or you can also add in spice powders like paprika/red chilli powder. This goes well with any Indo-chinese starter recipe like Paneer manchurian, dragon chicken etc. Otherwise, you can also have it as it is. Do try this recipe and enjoy for any special lunch or dinner.
