🍃 Ingredients:
For instant dosa batter:
– Bombay Rava – 1 cup
– Wheat Flour – 2 tbsp (for binding) 🌾
– Bengal Gram Flour – 1 tbsp (for crispness and color) 🟡
– Sugar – 1/2 tsp (for color) ✨
– Curd – 1 cup 🥛
– Water – as needed 💧
– Salt – 1/2 tsp 🧂
For instant chutney:
– Coconut pieces – 1/4 cup 🥥
– Roasted Bengal Gram – 2 tbsp (or roasted groundnuts as an alternative)
– Coriander Leaves – 1/4 cup 🌿
– Curry Leaves – 2 sprigs 🌱
– Green Chilies – 2-3 🌶️
– Garlic Cloves – 4-5 🧄
– Curd – 2 tbsp (or 1 tbsp Lemon Juice) 🥛🍋
– Salt – to taste 🧂
For tempering:
– Oil – 1 tbsp 🛢️
– Black Gram – 1/2 tsp
– Bengal Gram – 1/2 tsp 🟡
– Mustard Seeds – 1/2 tsp 🌱
– Cumin Seeds – 1/2 tsp 🌿
– Dried Chilies – 2 🌶️
– Curry Leaves – 2 sprigs 🌱
– Salt – a pinch 🧂
🧑🍳 Cooking steps:
For the instant dosa batter:
1. Grind 1 cup Bombay Rava, 2 tbsp Wheat Flour, 1 tbsp Bengal Gram Flour, and 1/2 tsp Sugar into a fine powder.
2. Transfer the mixture to a bowl, add 1 cup Curd, and mix well.
3. Add water as needed for consistency. Let the batter sit for 10 minutes.
For the instant chutney:
1. To a mixie jar, add 1/4 cup Coconut, 2 tbsp Roasted Bengal Gram, 1/4 cup Coriander Leaves, 2 Curry Leaves sprigs, 2-3 Green Chilies, and 4-5 Garlic Cloves.
2. Add 2 tbsp Curd (or 1 tbsp Lemon Juice) and salt to taste. Grind into a smooth paste.
3. Heat 1 tbsp Oil in a pan and prepare the tempering with Black Gram, Bengal Gram, Mustard Seeds, Cumin Seeds, Dried Chilies, and Curry Leaves. Add a pinch of salt and mix into the chutney.
For making the dosa:
1. After the batter has rested, add 1/2 tsp Salt and adjust with water to achieve dosa batter consistency.
2. Heat a pan on high flame, pour the batter, and spread evenly.
3. Drizzle Oil or Ghee, flip the dosa once browned, and cook on low flame.
