Hulgyache shengole is a traditional and healthy recipe. Hulge are kulith or horse gram. Hulge are rich in iron, protein and calcium and easy to digest. It helps in weight loss, to lower cholesterol level. It is low in fat and rich in antioxidants. So you must include horse gram in your diet. This is a Konkan special traditional recipe. In Marathwada shengole are made from jwari. We already have seen that recipe. It is a very easy and simple recipe. It doesn’t need lot many ingredients. You can make it from very basic ingredients those are readily available in your pantry. It looks not that good but tastes simply delicious. It can be a good one dish meal after a long tiring day or a healthy option for breakfast too. You can try this recipe at home and drop a comment for me. Do not forget to like, share and subscribe.
Ingredients:
• 1 cup Hulgyache pith / Horse gram flour
• Green chili-Ginger-Garlic-Coriander leaves paste
• A pinch of Hing
• Turmeric powder
• Salt to taste
• Water as needed
• 1 tsp Oil
• Hot Water
• 2 tsp Oil
• 1 tsp Mustard seeds
• 1 tsp Cumin seeds
• Curry leaves
• A pinch of Hing
• Turmeric powder
• Green chili-Ginger-Garlic-Coriander leaves-dry Coconut paste
• Salt to taste
Method:
• Mix hulgyache pith, green chili-ginger-garlic-coriander leaves paste, hing, turmeric powder, salt
well together and add a little water at a time to knead stiff dough.
• Add oil and knead the dough well.
• Coat the dough with oil and cover it. Rest the dough for about 10-12 minutes.
• Heat up water in a pan. In another pan heat up oil and add mustard seeds.
• When mustard seeds pop up add cumin seeds, curry leaves, hing, turmeric powder, green chili-
ginger-garlic-coriander leaves-coconut paste and fry it for about a minute.
• Add hot water, salt and bring the mixture to boil.
• Take a small portion from the dough and make it smooth and even.
• Roll out shengole from it.
• When the mixture begins to boil, turn the heat to medium and drop shengole into it.
• Simmer the mixture until shengole are cooked well for about 10-15 minutes.
• Hulgyache shengole are ready. You can have it as it is.
