Kurkuri Bhindi: Spicy Crispy Okra Recipe by Manjula

Wash and pat dry the okra, then cut off the tops and bottoms. Slice the okra vertically into thin strips. Lightly massage the okra with your fingers to remove some of the seeds, although it’s not necessary to remove all of them. Sprinkle salt, cumin seeds, coriander powder, chili flakes, mango powder, and turmeric over the okra, mixing well to ensure the okra is well coated with spices. Let it sit for about 10 minutes until the okra becomes moist from the salt.
Sprinkle besan and rice flour over the okra, mixing slowly and lightly rubbing them until the okra is well coated. Heat oil in a frying pan over medium-high heat. Fry the okra in batches without overcrowding the pan. Fry until the okra is golden brown, which should take about seven minutes. Remove the okra and place them on paper towels to absorb excess oil.
Kurkuri bhindi, or crispy okra, is now ready to be served.
