Ingredients –
500gram raw jackfruit
2 cups finely sliced onions
1 cup sliced tomatoes
2 red chilis
2 green chilis
2 tbsp ginger chili garlic paste
2 bay leaves
Cinnamon stick
1 black cardamom
1 green cardamom
6-7 crushed black pepper corns
4-5 crushed cloves
1 tsp garam masala
1 tbsp red chili powder
2 tbsp coriander powder
1/2tsp turmeric
1 tsp Salt
1tsp aamchur powder
2tbsp Kasoori methi
1/2 cup mustard oil
2tbsp ghee
Method – Peel and cut jackfruit in big pieces with a sharp knife. Add chopped jackfruit in a pressure cooker, add 1 cup water, 1 tsp salt and 1/2tsp turmeric powder. Take 2 wishtles on medium flame, switch off the flame, allow to release the pressure, open the pressure cooker and sieve jackfruit pieces, keep aside.
For margination, take a big vessel, add onions, tomatoes, green and red chilis, one whole garlic bulb in the vessel. Add all other spices with are mentioned in the ingredients list, add boiled jackfruit, medium hot mustard oil and mix nicely. Mix all ingredients with hands. Cover and keep aside for 15 minutes.
Now grease a heavy bottom wok with ghee, transfer all the mixture in wok, spread evenly, press with a spoon, cover with a lid.
Heat a tawa on stove, keep wok on tawa, allow to cook on low flame for 30 minutes.
After 30 minutes, remove wok from tawa, give a stir and our delicious kathal ki sabji is ready.
