Ingredients –
For uttpam batter –
1 cup samak rice (vrat wale chawal )
2 tbsp waterchestnut flour (singhade ka aata)
1 boiled potato
1 green chili
1 piece of ginger
1 tsp salt
1/2 tsp black pepper powder
Fresh coriander
1/2 cup curd
For chutney –
1tbsp ghee
1/4 cup peanuts
2 tbsp desiccated coconut / fresh coconut
3-4 red chilis
1 tsp cumin seeds
1/2 tsp salt
1 tbsp lemon juice
Few curry leaves
Method –
Wash and soak samak rice for 30 minutes, remove extra water and transfer in a mixture jar, add water chestnut flour, boiled and grated potato, curd and grind for a minute. Transfer in a bowl, add salt, black pepper powder, fresh coriander and mix nicely. Cover and keep aside.
For chutney heat a pan, heat ghee, crackle 1/2 tsp cumin seeds, add peanuts and roast for 2-3 minutes, add desiccated coconut, red chillis, and cook for few seconds.
Switch off the flame, allow to cool. Transfer in a mixter jar, add 1/4 cup water and prepare a fine paste, transfer this paste in a bowl. Add salt and lemon juice. Heat a spoon ghee in a pan, add 1/2 tsp cumin seeds, and curry leaves, switch off the flame and add in prepare peanut paste. Our homemade vrat wali chutney is ready.
